MONTHLY RECIPES (as seen and TASTED at the Siemens Health & Wellness Expo):

Crostini with Elodie Farms Camembert and Citrus Marmalade

1. preheat oven to 350 degrees.

2. slice pieces of French bagette (to your desired thickness), lay them out onto a sheet pan, brush with olive oil and sprinkle with salt and pepper, toast till golden brown, about 5 minutes.

9- lemons,washed,cut into 16ths and seeded

3-medium oranges, washed and cut into quarters

1 cup water

3 cups of sugar

Combine the lemon and orange pieces in the bowl of a food processor. Pulse until they have been reduced to 1/4-inch pieces. Transfer to a large bowl and add the water, mixing well. Cover and let stand at room temperature overnight or up to 12 hours.

Transfer the mixture to a large saucepan; bring to a boil over high heat, then reduce the heat to medium-high and add the sugar, stirring to combine. Cook, stirring occasionally, for about 40 minutes, until the mixture falls from a spoon in thick drops; the mixture will start off quite wet, then begin to thicken after 25 minutes or so.





Crostini with Elodie Farms Cheve and Red Onion Marmalade


1. preheat oven to 350 degrees.

1/4 cup olive oil

6 cups thinly sliced red onions (about 3 1/4 pounds)

1 cup  sugar

3/4 cup red wine

1/2 cup red wine vinegar

Heat oil in heavy large pot over medium heat. Add onions. Cover and cook until onions are tender, stirring occasionally, about 15 minutes. Add sugar, red wine and red wine vinegar. Cook uncovered until onions are very tender and mixture is thick, stirring frequently, about 20 minutes.  Season to taste with salt and pepper.

We've Prepped, You Finish: Our chefs will do all the preparation in our kitchen and you're only responsible for finishing the task. Detailed instructions come with each meal for you to finish "cooking" the meal. Minimum of 6 people per order. 24 Hour lead time required. 

Don't Worry About A Thing: Our chefs will come to your house and prepare your desired menu in your own kitchen. They'll bring all necessary pots/pans/serving utensils, ingredients, and use your kitchen equipment do all the work.  Minimum of 6 people per order. 48 Hour lead time required.

 

COOKING DEMOS:

Cooking Demos for groups of 10 or more people are available at our kitchen-site located at Tir Na Nog in downtown Raleigh. Learn everything from the basics to advance knife skills. 

For on-site demos we require groups of at least 4 people. Our chefs will have a more personal lesson in store and you don't have to go anywhere! We'll bring all the necessary equipment to finish the job in your own kitchen.
